Homemade pseudo-jambalaya

I know the jambalaya purists out there would kick my ass about even pretending this is like their official dish, but it's undoubtedly the basis for what I've made. So how does this differ from the Paella-inspired risotto I made a few weeks back? A few ways: 1)brown Basmati rice, not white Arborio; 2)no peas; 3)ham; 4)chopped Jalapeno pepper; and 5)Ontario tomatoes(!) instead of salsa. The verdict: yum!

I also picked up some Ontario apricots. I'm thinking I might make a pie with those.

I wouldn't call myself a Jambalaya purist because my own version is done through that famous 'PC' kitchen.

This latest one, I must say, looks really yummy and I'm sure tastes quite delicious too....I don't doubt your expertise on this dish now.

I see that your factory is on high gears once more.

I only had about two bitefuls of the PC version. Sadly, when I was double-checking the ingredients list, I saw "butter" amongst them. I ended up having to give all of the rest of it to my parents. :(

Now that the heatwave has passed, I expect I'll be doing more cooking again. I realize that I keep from going overboard by cooking only about one major dish (or less) a week.

By the way, does your system also react adversely to any kind of nuts, especially walnuts?

I can't handle almonds well -- they were the first nut I noticed I had problems with. I get an itchy palatte when I eat those. The last time I tried hazelnuts, I had the same problem, it seemed more severe, but it's been so long since I had almonds that it might be that my tolerance has fallen in general. My digestive system doesn't seem to like peanuts, but I've been known to handle the odd peanut-butter flavoured, non-dairy product from time to time. It's nothing severe. I seem to get a bit congested when I eat cashews, but it's nothing I can't handle, so I eat those freely. I don't have any noticeable problems with walnuts at all.
